Simple Recipe for Sea Scallops

The secret to this easy scallop recipe is using a 12 muffin baking pan.
This allows each scallop to marinate individually in its own sauce.
Always try to pick 12 scallops that are approximately the same medium size.
This is perfect for a dinner for two.
- 12 medium sized scallops (approximately the same size - choose carefully)
- 2 tablespoons butter
- 1 tablespoon soy sauce
- 2 teaspoons chopped garlic
- Juice from one lemon
- Chopped fresh parsley to taste
- 2 tablespoons fresh grated Parmesan
Preheat oven to 400 degrees
Spray 12 muffin pan with natural no-stick cooking spray (e.g. Pam)
Place each scallop in its separate space in the muffin pan
Divide remaining ingredients
Put a dab of each ingredient on top of each scallop
Bake for approximately 6 minutes. They are done when flesh is opaque.
