Healthy Recipe for Butter Bean Soup with Fresh Rosemary

This healthy butter bean soup recipe (shared with me by a good friend) is perfect if you are not feeling well and need a light soothing meal.

Rosemary is a powerful antioxidant and can help headaches and congestion.

Ingredients

  • 2 Tablespoons Olive Oil
  • 3 carrots (chopped in small pieces)
  • 2 celery stalks (chopped in small pieces)
  • 1 chopped onion
  • 3 cloves garlic (chopped)
  • 1 15.5 ounce can of Butter Beans (undrained)
  • 2 cans of broth (vegetable or chicken)
  • 1 cup water
  • 2 teaspoons Fresh Rosemary (chopped)
  • Fresh grated Parmesan (as desired)
  • Directions

    Sauté carrots, celery, onion and garlic in olive oil. Add beans (undrained), broth, water and rosemary. Simmer until thoroughly heated.

    Top with fresh grated Parmesan cheese.

    Quick Tip: Use scissors to cut rosemary into small pieces.
