Gingerbread Mini-Muffins

Perfect for Holiday Mornings

Gingerbread mini-muffins are an easy treat to prepare for a holiday breakfast.

Each year, my two sisters and I visit Cape May, New Jersey. The charming hotel that we stay in each year makes a variety of wonderful mini muffins. While this is a different type of mini muffin than they make at Hotel Alcott, this web page is dedicated as a tribute to Cape May, New Jersey and my sisters who have made it such a special place for our annual "sisters vacation".

Ingredients
  • 1 cup plus 1 tablespoon flour
  • 3/4 teaspoon baking soda
  • 3/4 teaspoon ground ginger
  • 1/4 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/8 teaspoon ground allspice
  • 1/8 teaspoon ground cloves
  • 1/4 cup molasses
  • 1/4 cup sugar
  • 1/4 cup oil
  • 1/4 cup hot water
  • 1 egg
  • Brown Sugar (To Sprinkle on Top)
  • Directions

    Preheat oven to 325 degrees. Line muffin pan (for small muffins) or spray with cooking spray for baking. Sift flour, baking soda and spices together. In a separate bowl, whisk molasses, sugar, oil, water and egg. Then combine with flour/spice mixture. Use tablespoon to drop batter into muffin pan. (This recipe makes about 18 mini muffins.) Bake for 16 minutes. Sprinkle with brown sugar. Enjoy!

    Quick Tip: Make batter ahead and refrigerate if you want a quick and special treat on a holiday morning. Then, you can just add batter to the muffin pan and bake.
